My favorite yogurt

I love yogurt. But I don't love that all yogurt has high fructose corn syrup in it. I've been searching and searching for a good healthy yogurt. I finally found brown cow Greek yogurt. It was such a bonus when I found out that it's fat free! You'll never know it though. Enjoy!

p.s. I should note that I'm not doing WW, I just like good, healthy low fat foods.

WW Points: for the individual container: 2 points (double check the points though)

Three New Ones

I have been experimenting...Look what I came up with!!! Also some yummy dinners.

I love oatmeal, but have issues with the real stuff. Instant has always been my favorite but it is not that good for you. My version is:

Special Oatmeal

1 C water
1/2 C oats
1/8 C granola
1/2 of a WW yogurt container (you can use any yogurt as long as it is 1 point for the container)
1/4-1/2 tsp. cinnamon
Pinch of salt
1/4 C fruit (I like blueberries and strawberries)

Boil water then add oatmeal. Let simmer about 5 minutes. Turn off heat and let sit till ready to use or till done. Pour in a bowl and add rest of ingredients and stir well. Makes a good amount.

Serves 1
Points 3 (WOW!!!)

Quick Tamale Casserole

1 1/2 lb. hamburger meat
3/4 C green onions
1 can chopped green chile's
1 can tomato soup
3/4 C salsa
1 can corn
1 T Worcestershire sauce
1 tsp. chili powder
1/4 tsp. garlic powder
4 slices American cheese(I used fat free)
4 corn muffins

Brown beef with green onions. Reserve 2 T green chile's for later, pour in the rest. Add tomato soup, salsa, corn, Worcestershire sauce, chili powder, and garlic powder. Mix well. Pour in a casserole pan. Top with cheese and cut up muffins and sprinkle on top. Bake at 350 degrees for 10 minutes. Serve with Mexican sour cream if you want.

Mexican sour cream
1 c sour cream
2 T green chile's
2 tsp. lime juice

Mix well.

Dish serves 6
Points per serving=7
Add 2 T Mexi sour cream adds 1 point.

One more...

Pitachos

This I adapted from a friend and changed the name. It's a little involved but so worth it!!

Dip:
1 can of chickpeas, drained
1/2 lemon, juiced
1 tsp. ground cumin
1/4 tsp. cayenne
salt
1/4 c olive oil
1-2 tsp. garlic minced

Put all in a food processor and puree.

Salsa:
1/3 c cucumbers, seeds removed
4-6 tomatoes, diced
1/2 of green bell pepper, diced
2 T fresh parsley
1 lime, juiced
1 tsp. salt

Mix all ingredients in a bowl and set aside or put in fridge till ready.

Chips:
Pam spray
2 cloves garlic
8 pitas
1/2-1 C Parmesan cheese
1-2 tsp. poppy seeds
parsley leaves
1-2 tsp. salt
3/4-1 1/2 C sharp cheddar cheese

Cut pitas in half and then cut them out of their pockets then cut into triangles. You should get 8 triangles out of one pita. Spray with Pam and sprinkle garlic, poppy seed, and Parmesan. Bake at 400 degrees for 5 minutes or till toasty. Sprinkle with parsley and salt and then cover them in cheese.

Put all three in bowls and serve. Pita, then spread dip on top, and then spoon salsa over them.

Serves 8 (each serving is 8 pita triangles)
Points=5.37 (if using smaller amounts of cheese)
8.37 (if you use larger amounts of cheese)

Hope you all enjoy. Sorry no pictures. I will try to remember to take some next time.

Taco Soup

This is one of my favorite Weight Watchers meals and it creates leftovers for DAYS so you don't have to think about dinners (or lunches if you prefer) for a few days. I actually got this recipe at a weight watchers meeting so I don't have the calorie content or anything but for 1 cup of soup, its only TWO points!

TACO SOUP
1 lb ground beef
1 large onion-chopped
1 pkg taco seasoning
1 pkg Ranch dressing mix
1 can fat free refried beans
1 can mexican style chili beans
1 1lb can whole corn
1 1lb can chopped tomatoes
1 1lb can tomato sauce
1 1/2 cups water

Brown beef and onion until cooked. Add taco seasoning and ranch. Add remaining and cook for 15 minutes.

You can also serve this with tortilla chips and cheese but obviously that will add points depending on the kind you choose. Enjoy!
